Ingredients
  • 1-1/2 Cups Freshly Squeezed Lime Juice
  • 1/2 Cup Freshly Squeezed Orange Juice
  • 1 Cup Water
  • 1 package(1-3/4oz) powdered fruit pectin
  • 4-1/2 Cups Sugar
  • 1/4 Cup Tequila
  • 1 teaspoon grated Lime Zest
  • 2 Drops Green food coloring
  • Lime Strips

Directions
  1. In a large dutch oven,combine fruit juices,water,and pectin over medium high heat.
  2. Bring to a rollin boil.
  3. Add sugar.
  4. Stirring constantly,bring to rolling boil again and boil 1 minute.
  5. Remove from heat,skim off foam.
  6. Stir in tequila,lime zest,and food coloring.
  7. Place a lime strip in each canning jar.
  8. Spoon jelly into jars.
  9. Cover and cool to room temperture.
  10. Store in refrigerator.
  11. Serve with cream cheese and pretzel chips
  12. Makes about 6-1/2 Cups of jelly

Hello....
This recipe really sounds like one that I would like to try...I just have a question ? regarding the processing of the jelly...do I 'can' it like you would if you were canning fruits or veggies?
Or...do you just pour it into the canning jars and refrigerate as you stated?....when a recipe says use canning jars...I envision 'canning' which I really have only done a few times in my life!

I took this (along with Candy Apple Jelly) to a brunch yesterday. We served it with bagels and cream cheese. People loved it! I love it! What a great recipe. It would also make a great "appetizer" for any buffet table!
