Green Chili Cheesy Potatoes

- 1/4 cup butter or margerine shopping list
- 1/4 cup flour shopping list
- 3/4 teasoon salt shopping list
- 1/8 teason pepper shopping list
- 2 cups milk shopping list
- 6 oz. shredded cheese (cheddar, colby, or other orange variety) shopping list
- 1/2 cup grated parmesan cheeese shopping list
- 3 to 4 medium potatoes cut into small cubes shopping list
- 13 oz or other dependant on your taste of green chili (roasted and diced, New Mexican, anaheim, or banana peper) shopping list
How to make it
- Heat oven to 350
- In saucepan, melt butter.
- Stir in flour, salt and pepper to form a paste.
- Add milk and whisk until the flour paste dissolves
- Cook over medium heat,stirring constantly unitl mixture begins to boil
- Add cheeses and stir in until cheese is melted into mixturre
- Add potatoes and chili
- Pour inot 2 quart caserole or similr baking pan with cover
- Bake covered for 60 to 90 minutes until bubbly and potatoes are tender
- Let cool for 10 minutes
