How to make it

  • In a small bowl, mix together the olive oil, mustard, parsley, vinegar, water, and salt, and stir well to blend.
  • Set aside.
  • Lightly flour the fish fillets and season with salt and pepper.
  • In a skillet, put vegetable oil over medium-high heat qnd fry the fillets about 3-4 minutes on each side, or until the fish is golden and flakes easily with a fork.
  • When fish is done, remove it to a serving dish and keep warm.
  • Pour the mustard sauce into the skillet and cook for only about 30 seconds, until it is hot and bubbly.
  • Pour over the fish or return the fish to the skillet and coat with the sauce. Serve at once.
