How to make it

  • Preheat oven to 450 degrees F (230 degrees C).
  • Grind oatmeal in a food processor or blender. In a large bowl, combine oatmeal, flour, baking powder and salt. In a separate bowl, dissolve honey in vegetable oil then stir in the milk. Combine both mixtures and stir until a soft dough is formed. Form the dough into a ball and place on a lightly oiled baking sheet.
  • Bake in preheated oven for about 20 minutes, or until bottom of loaf sounds hollow when tapped.

    It is very good, easy and fast!
    I did burn it the first time with 450, next time I used 400 and it was perfect. Also I didn't have whole wheat so I just used regular unbleach flower instead. Just an idea for someone. Other thing - I don't use baking powder - ever read what's in it???? I use plain baking soda instead (1-1.5 tsp).
    My husband's comment: It is the best corn bread he ever had. :)
