Baked Salmon With Warm Tomato Basil Oil Recipe
An easy to make salmon dish perfect for beginners, or those nervous about cooking fish.

Ingredients
  • 6 pieces of salmon, about 5 ounces/140 g each, or 1 large filet
  • Salt and pepper
  • Olive oil (for fish)
  • 1/2 cup extra virgin olive oil
  • 1 x tomato, seeded and finely diced
  • 1 handful shredded basil leaves
  • Salt and pepper to season

Directions
  1. Heat the oven to 325°F/160°C.
  2. Pat the salmon dry with paper towel, and season with salt and pepper.
  3. Put the fish on a baking sheet and bake until cooked through, about 15 minutes.
  4. Meanwhile, warm the olive oil in a saucepan.
  5. Take it from the heat and stir in the tomato and basil.
  6. Season with salt and pepper.
  7. Take the fish from the oven and shift it onto a serving platter.
  8. Spoon the warm tomato basil oil over. Serve.
