Baked Salmon with Warm Tomato Basil Oil

- 6 pieces of salmon, about 5 ounces/140 g each, or 1 large filet shopping list
- salt and pepper shopping list
- olive oil (for fish) shopping list
- 1/2 cup extra virgin olive oil shopping list
- 1 x tomato, seeded and finely diced shopping list
- 1 handful shredded basil leaves shopping list
- salt and pepper to season shopping list
How to make it
- Heat the oven to 325°F/160°C.
- Pat the salmon dry with paper towel, and season with salt and pepper.
- Put the fish on a baking sheet and bake until cooked through, about 15 minutes.
- Meanwhile, warm the olive oil in a saucepan.
- Take it from the heat and stir in the tomato and basil.
- Season with salt and pepper.
- Take the fish from the oven and shift it onto a serving platter.
- Spoon the warm tomato basil oil over. Serve.
