Easy Red Hot Carrots

- 1 pound carrots, sliced into rounds shopping list
- 1 to 2 pickled jalapeno, chopped (or to taste) shopping list
- 3 TBSP. jalapeno pickling liquid shopping list
- 2 TBSP. either canola or corn oil shopping list
- 2 teasp. minced onion shopping list
- 2 teasp. cumin seeds, toasted and ground shopping list
- 1 teasp. white vinegar shopping list
- 1 clove garlic, minced shopping list
- pinch of sugar shopping list
- salt to taste shopping list
How to make it
- Blanch the carrots in a saucepan of boiling water
- Drain the carrots
- rinse them in cold water and drain again
- in medium nonreactive bowl, mix together the remaining ingredients.
- add carrots to the marinade,
- refrigerate them covered for at least 24 hours
- taste the carrots and adjust the seasoning if needed
- keep carrots refrigerated ,, they will keep for several days

This sounds fantastic. We love carrots and I am always looking for new ways to make them. This is right up our alley since we love spicy. This is going on the dinner table tonight. Great post as usual my friend and a very high five.
