Johnny Beas Southern Greens

- 6 cups greens; washed, dried well & sliced shopping list
- 3 Tablespoons bacon grease shopping list
- 1 teasp. of vinegar-liquid from bottled whole, small, green, hot Louisiana peppers shopping list
- 1/2 teasp. white vinegar shopping list
- salt & black pepper to taste shopping list
How to make it
- Heat the bacon grease in a heavy skillet over medium heat. Add the sliced greens & saute, stirring, for 4 or 5 minutes. Turn heat to low. Add remaining ingredients except for salt. Bring to boil & then cover & simmer on very low heat for 20 minutes, or until greens are tender. Taste greens & add the salt if necessary. Serve with fried chicken, ham, or whatever meat you like & of course, biscuits!
