Homemade Refried Beans

- 2 small bags pinto beans - rinse and drain well. shopping list
- 1 package taco seasoning - (pick your favorite) shopping list
- 1 t minced garlic shopping list
- 1 small onion diced - small pieces. shopping list
- 3/4 t. black pepper shopping list
- Nacho jalapeno's about 10 slices or so depending on taste. shopping list
- (or pickled jalapeno slices) shopping list
How to make it
- Set crock pot on high.
- Put rinsed beans in crock pot. Add boiling water until the beans are coverd about 1 inch.
- Add taco seasoning mix, pepper and jalapeno's, garlic ad onions.
- Cook 1 hour on high....check on the water level. Add more water if needed, enough to cover the beans.
- Cook for 6-7 hours on low..or until tender.....and stir occasionaly.
- Make sure to check that the water lever is just over the beans.
- The water will become thicker as beans cook.
- Add more salt and pepper to taste!
- You can serve as is...or take some out and mash together with a fork, or even a hand blender.
- They are so tasty. You can freeze in a tupperware. They keep for a few months..and taste great!

Yummmm....Sounds great! :) I never thought about making my own.....I know they'd be much better than the canned fat-free ones I usually get! Geez :)
