Tourondels Cabbage Salad Recipe
This is a slaw like you have never tasted. Not drippy or mayonnaisey but crunchy and fresh, with a surprising sweetness from the raisins. My nephew turned me on to this one...

Ingredients
  • 3/4 cup golden raisins
  • 1/4 cup red wine vinegar
  • 3 TBS whole-grain mustard
  • 1 TBS sugar
  • 1/4 cup grapeseed oil (or sunflower)
  • 2 TBS walnut oil
  • Salt, freshly ground black pepper
  • 1/2 medium head of green cabbage, shredded (about 8 cups)
  • 1 large carrot, peeled and shredded
  • 1/2 small red onion, thinly sliced crosswise
  • 1/4 cup snipped chives OR sliced green onion

Directions
  1. In small bowl, soak raisins in hot water for 10 minutes; drain well.
  2. Meanwhile, in a large bowl, whisk the vinegar with the mustard and sugar.
  3. Whisk in the oils and S&P.
  4. Add cabbage, carrot, onion, chives and raisins and toss well.
  5. Adjust S&P after tasting and toss again.
  6. Chill well before serving.
