Mexican Rice Dressing

- 1-1/4 cups cornmeal shopping list
- 1 teaspoon salt shopping list
- 3/4 teaspoon baking soda shopping list
- 1-1/4 cup milk shopping list
- 3 eggs beaten shopping list
- 1/3 cup vegetable oil shopping list
- 2-1/2 cups cooked rice shopping list
- 16 ounce can cream style corn shopping list
- 8 ounce cream style corn shopping list
- 3/4 cup chopped white onion shopping list
- 3 tablespoons finely chopped jalapeno pepper shopping list
- Additional cornmeal shopping list
- 2 cups shredded cheddar cheese shopping list
How to make it
- Combine 1-1/4 cup cornmeal, salt and baking soda in mixing bowl then mix well.
- Add milk and next seven ingredients then stir until blended.
- Pour into a greased rectangular pan sprinkled with additional cornmeal.
- Bake uncovered at 350 for 55 minutes.
- Sprinkle cheese evenly over top and bake 5 minutes longer.
