Black Bean Casserole Recipe
This dish is also known as "Mexican Lasagne" and is healthy and flavorful!

Ingredients
  • 1 white onion, chopped
  • 1 yellow bell pepper, diced
  • 1 large green pepper, diced 
  • 16 oz jar of salsa or picante
  • 2 cans Mexican Style Jalapeno diced tomatoes
  • 2 tsp ground cumin
  • 2 cans of black beans ( drained)
  • 8- 6" soft tortillas
  • 2 cup shredded mozzarella
  • Optional- add chicken ( adds 2 ww points per square)

Directions
  1. In a large skillet combine onion, peppers, tomatoes, salsa, garlic and cumin.
  2.   Bring to a boil, reduce heat and simmer, uncovered, for 15 minutes.
  3. Stir in beans and heat through.
  4. Preheat oven to 350.
  5. In a 9x13" baking dish layer ingredients in order; 1/3 bean mixture, 4 tortillas, 1/2 cheese, 1/3 bean mixture, 4 tortillas and remaining beans.
  6. Cover and bake for 30 minutes.
  7. Top with remaining cheese and bake until it melts.
  8. Let stand 10 minutes before serving.
  9. Cut into 8 squares and serve. ( with sour cream, salsa....)
