Potage Choisy or Lettuce Soup Recipe

Ingredients

How to make it

  • soften onions with buter in saucepan
  • add milk, chicken stock, and potatoes
  • bring to a boil. coverand let simmer over a low heat for 20 minutes or till potatos are tender
  • add lettuce and continue heating for 3-4 minutes
  • blend soup to a puree, season
  • garnish with sour cream and cherry tomatoes

    I have never had lettuce soup before. I have used lettuce in fried rice recipes but I will have to try this! Sounds very good. Thanks for posting!Deb
