Peanut Chicken Satay With Asian Rice Recipe
This recipe came from an estate sale a few years back. I love peanut butter and decided to give this one a try. It's very good and the friends I had over for dinner loved them. Hope you do too.

Ingredients
  • 1 package roasted chicken gravy mix prepared according to package
  • 1/4 cup peanut butter
  • 1 teaspoon white vinegar
  • 1/2 teaspoon grated fresh ginger
  • 1 green onion sliced
  • 1 pound boneless sinless chicken breasts cut into strips
  • 1 package chicken fried rice prepared according to package

Directions
  1. Combine gravy mix, peanut butter, vinegar and ginger in a small saucepan and cook stirring frequently over medium heat until heated through and smooth.
  2. Remove 1/4 cup of sauce.
  3. Stir green onion into remaining sauce then cover and set aside.
  4. Thread chicken on skewers.
  5. Spray chicken with nonstick cooking spray then grill or broil chicken turning once and basting with reserved sauce.
  6. Serve with remaining sauce.
  7. Garnish with additional chopped green onions.
