  • COUNTRY FAIR FUNNEL CAKES
  • ===============================
  • 3 eggs, beaten
  • 2 c. milk
  • 1/4 c. sugar
  • 4 c. flour, sifted
  • 2 tsp. baking powder
  • 1/2 tsp. salt

Directions
  1. ===============================
  2. To beaten eggs, add milk and sugar.
  3. In separate bowl sift dry ingredients.
  4. Add to egg mixture, beating until smooth.
  5. Heat oil to 375 degrees and pour batter into hot fat through a regular household funnel. Control the flow of batter by holding your finger over the bottom of the funnel.
  6. Make patterns, designs, swirls or whatever with the stream of batter as it flows into the hot fat.
  7. When "cakes" are golden brown, drain, sprinkle with confectioners'
  8. sugar and serve warm

sure you drain these really really well as they
are known to be 'pretty greasy' :)

We made these tonight for a snack and they were great-I added a bit more sugar since I have a sweet tooth. Hint for others: If you have tongs with the locking handles, lay across your mixing bowl and your funnel will sit in between the tines to drain between batches.
