How to make it

  • Saute onion and zucchini
  • add chard, stir occasionally
  • stir in herbs quickly and push to side of pan
  • crack egg into pan and let cook slowly for a little bit
  • as it starts to firm up, break it up a little
  • finally stir all together until egg is done to your liking
  • note: I like my eggs not too scrambled so I like to see some nice yellow yolk

    I omitted the dill as we'd just harvested our dill for a recipe a few days ago. I quadrupled the recipe and did about 1/8 cup basil and 1/16 cup parsley. Didn't have time in my rushed morning to add any other greens. Even without the dill it was absolutely fantastic. Thanks for the recipe - I'm always at a loss when it comes to zucchini as it can sometimes taste a bit strong to me. The Zucchini really soaked up the flavor of the onion, while still retaining a bit of it's own flavor, which was perfect me.
