Garden Scrambled Eggs

    I love zucchini and eggs and this is a very quick and easy breakfast.I did not use the curry powder or cayenne pepper, (I’m a wimp) I don’t mind cayenne in some things but not eggs, and I’m not a fan of curry.
    Next time I make these I will leave the basil out, as I found it got lost in the flavours.
    Love the aroma of onion and zucchini together, and it was tasty.
    I made mine scrambled.
    I don’t know if the submitter meant 1 teaspoon or 1 tablespoon in her ingredient list.
    I took it as 1 teaspoon and it worked out fine.

    Great picture Manella! Hmmm, I too would probably use 1 teaspoon of the herbs for one egg but I believe the submitter is calling for 1 Tablespoon which to me would seem like a lot. You used good judgement. Zucchini and onions is a great combo!

    Thank you Linda:) i found i tsp. perfect, and like you 1 tbsp. seemed to be to much. Then again if you like lots of herbs maybe not:? I think nest time i will try it with spinach or beet greens.

    1 T. means Tablespoon, but I think for one egg that would be a lot? Unless it's meant to be very herby?
    Spinach sounds like a good suggestion! I'd add some red bell peppers too, yum! :)

    Awesome photo, Manella! Those look so good. Would love to have them for breakfast. I'm with you when it comes to curry powder and cayenne. I agree a tablespoon is a lot. I wonder if the submitted really meant teaspoon and wasn't paying attention and accidentally used a "T."
