Great low carb variation for zucchini

Ingredients
  • 2 c grated zucchini
  • 1 t. salt
  • 1 egg
  • 2 T. grated red onion
  • 1 T. whol wheat flour
  • 1/8 t. each salt and peper (or to taste)
  • 2 t. olive oil
  • 1 T. butter

Directions
  1. Mix grated zucchini with salt and place in a suspended colander for at least 20 minutes.
  2. Press and squeeze out as much additional moisture as possible before proceeding with recipe.
  3. Blend drained zucchini with onion, salt and pepper.
  4. Fold in wheat flour and beaten egg
  5. Heat oil in a non-stick pan over medium-high heat.
  6. Using wet hands, form squash mixture into six even patties
  7. Add buter to hot oil, followed by zucchini cakes
  8. Cook three to four minutes on each side, until golden borwn and cooked through(cooking tmies will vary, depending on thickness)
