Cheese Baked Sturgeon Recipe
We go sturgeon fishing a lot here in SW Washington. Living right on the Columbia River, we have an abundance of sturgeon. This is a great recipe for it!!

Ingredients
  • 4 sturgeon steaks, about 1/2 lb. each
  • 1 Tbsp. Dijon mustard
  • 1 (6-oz.) jar marinated artichoke hearts
  • 4 Tbsp. lemon juice
  • 1/2 tsp. dried oregano leaves
  • 1/4 tsp. black pepper
  • 1/2 cup chicken broth
  • 2 green onions, chopped
  • 1/2 cup grated parmesan cheese

Directions
  1. Place sturgeon steaks into a baking dish. Spread with mustard. Drain marinade from artichoke hearts and reserve.
  2. Combine marinade, lemon juice, oregano and pepper. Pour over fish. Cover and marinate in refrigerator for 2 hours, turning once.
  3. Heat broth. Pour around fish. Sprinkle with chopped green onions. Top with artichoke hearts and cheese.
  4. Bake at 375 for 25 minutes, or until fish flakes easily with a fork.
  5. Serve with some of the sauce spooned over each steak.

I love sturgeon! My dad and I used to fish it in the Danube Delta, just where it flows in the Black Sea! I think now is endangered there and cannot be fished anymore on the Danube - although it is sooo tasty. This brought back great memories for me. Thanks for sharing.
