How to make it

  • In a medium skillet,melt the 3 tablespoons of butter.
  • Add the zucchini,corn,cherry tomatoes,the thyme,and basil.
  • Cook until vegetables are tender,stirring occasionally.
  • Stir in cheese and 1 tablespoon milk.
  • Mix gently until sauce is smooth,keep warm while making the omelets.
  • In bowl,mix eggs,remaining 1/4 cup milk,salt and pepper,beat with a fork until just combined
  • In a 8" skillet,melt the 1 tablespoon butter.
  • Pour about 1/4 of the egg mixture,into skillet.
  • Cook gently lifting edges so uncooked portion flows underneath until the eggs are set.
  • Spoon about 1/2 cup zucchini filling onto omelet.
  • Fold omelet and place on a plate,place more zucchini filling on top
  • Serve immediately
  • Note: A glass of Orange Juice with a little champagne would'nt hurt a bit either.
