Ingredients

3 eggs

1 cup vegetable oil

2 cups sugar

4 cups chopped apples

1 teaspoon vanilla

2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons cinnamon

Directions

Preheat oven to 350° F.

Combine flour, baking soda, salt, cinnamon, and sugar.

Stir in eggs, sugar, vanilla, and oil.

Fold in apples.

Pour into 13x9 greased cake pan and bake for 45-55 minutes, or until fork poked in middle comes out clean.

How timely! Some friends from New Zealand stopped over yesterday and brought an apple cake with them. It was the first time I can say that I've had apple cake, and it was delicious!
