Cape Cod Barbecued Chicken Recipe
A put together barbecued chicken during our Cape Cod vacation with people asking for the recipe. It's the constant basting and even grilling to produce a very tasty dish.

Ingredients
  • 5 pounds chicken parts with bones
  • beer to cover chicken
  • Sauce:
  • 3 Tbs olive oil , or bacon grease for those who want added flavor) I use Olive for health reasons!
  • 3 oz Scotts liquid barbecue sauce or similar liquid barbecue sauce ( or make your own with :vinegar, red pepper. spices to taste ) kinda like a hot peppery spicey sauce.
  • 1 cup chciken broth
  • 4 oz bottled sweet thick style barbecue sauce ( like Kansas City brand ) to tame down the pepper taste
  • salt and pepper to taste

Directions
  1. Marinate chicken in beer an hour or so or even overnight ( I used over night )
  2. When ready to grill, drain beer from chciken and let chicken stand out about 1 hour to warm up a bit ( you don't want to grill ice cold chicken ).
  3. Salt and pepper chicken parts to taste
  4. Mix all barbecue sauce ingredients.
  5. Grill chicken parts on hot grill .
  6. Coat grill grates with cooking spray .
  7. I used medium heat, turning chicken every 10 minutes and basting also every 10 minutes with sauce until tender and fully cooked, about one hour.
  8. Frequent turning and basting prevents burnt chicken and adds a great flavor given by the sauce
