party size Cape Cod Barbecued Chicken
From midgelet 15 years agoIngredients
- 5 pounds chicken parts with bones shopping list
- beer to cover chicken shopping list
- Sauce: shopping list
- 3 Tbs olive oil , or bacon grease for those who want added flavor) I use Olive for health reasons! shopping list
- 3 oz Scotts liquid barbecue sauce or similar liquid barbecue sauce ( or make your own with :vinegar, red pepper. spices to taste ) kinda like a hot peppery spicey sauce. shopping list
- 1 cup chciken broth shopping list
- 4 oz bottled sweet thick style barbecue sauce ( like Kansas City brand ) to tame down the pepper taste shopping list
- salt and pepper to taste shopping list
How to make it
- Marinate chicken in beer an hour or so or even overnight ( I used over night )
- When ready to grill, drain beer from chciken and let chicken stand out about 1 hour to warm up a bit ( you don't want to grill ice cold chicken ).
- Salt and pepper chicken parts to taste
- Mix all barbecue sauce ingredients.
- Grill chicken parts on hot grill .
- Coat grill grates with cooking spray .
- I used medium heat, turning chicken every 10 minutes and basting also every 10 minutes with sauce until tender and fully cooked, about one hour.
- Frequent turning and basting prevents burnt chicken and adds a great flavor given by the sauce
