Strawberry Rhubarb Sauce Or Jam Recipe

This is a low sugar, soft serve jam or sauce. Great on shortcake with whipped topping.

Ingredients
  • 4 cups rhubarb, sliced in 1/4" pieces
  • 4 cups strawberries, sliced
  • 1/2 t. salt
  • 2 pkgs low-sugar pectin
  • 4 cups raw organic sugar

Directions
  1. Mix all ingredients, except sugar.
  2. Stir constantly while heating to a boil.
  3. Cook until rhubarb is softening.
  4. Add sugar.
  5. Stir until it has a rolling boil for one full minute.
  6. Skim foam.
  7. Pour into jars.
  8. Store in fridge or freeze.
