Ingredients
  • 4 (1 pound) loaves focaccia bread
  • 1/4 cup mayonnaise
  • 3 cloves minced garlic
  • 1 tablespoon lemon juice
  • 1 small yellow squash, cut thin strips 3/8 inch thick
  • 1 small sliced zucchini
  • 1 red sliced onion
  • 1 cup sliced red bell peppers
  • 1/2 cup crumbled feta cheese
  • 1/8 cup olive oil

Directions
  1. 4 (1 pound) loaves focaccia bread
  2. 1/4 cup mayonnaise
  3. 3 cloves minced garlic
  4. 1 tablespoon lemon juice
  5. 1 small yellow squash, cut thin strips 3/8 inch thick
  6. 1 small sliced zucchini
  7. 1 red sliced onion
  8. 1 cup sliced red bell peppers
  9. 1/2 cup crumbled feta cheese
  10. 1/8 cup olive oil
  11. Combine mayonnaise, minced garlic, and lemon juice in a small bowl. Set sauce aside in the refrigerator
  12. Heat the grill for high heat.
  13. Brush vegetables with olive oil on each side.
  14. Brush grill with oil.
  15. Place bell pepper and zucchini pieces closest to the middle of the grill ,and set onion and squash pieces around them.
  16. Cook for about 3 minutes, turn, and cook for another 3 minutes. The pepper may take a bit longer.
  17. Remove from grill, and set aside.
  18. While the vegetables are cooking, cut foccaccia into 4 slices.
  19. Spread sauce evenly over top, and sprinkle with feta cheese.
  20. Place on the grill, and cover with lid for about 2 to 3 minutes. Watch carefully so the bottom doesn't burn.
  21. This will warm the bread, and slightly melt the cheese.
  22. Remove from grill, and layer two pieces with vegetables.
  23. Cover with remaining bread.
  24. Serve warm.
