Cheesy Spinach Manicotti

- 8 oz. sliced mushrooms shopping list
- 2 to 3 garlic cloves, minced shopping list
- 3 egg whites shopping list
- 1 (10-oz) pkg.. frozen chopped spinach, thawed and well drained shopping list
- 15-oz. part-skim ricotta cheese shopping list
- 1 cup shredded reduced-fat mozzarella cheese, divided shopping list
- 1/3 cup grated parmesan cheese, divided shopping list
- 2 to 4 pinches crushed red pepper flakes shopping list
- 8-oz. (14 shells) cooked manicotti, well drained shopping list
- 2 cups marinara or spaghetti sauce shopping list
How to make it
- Preheat oven to 350.
- Spray large nonstick skillet with cooking spray. (I use a little olive oil instead of spray)
- Add mushrooms and garlic; cook 5 minutes on medium heat, stirring frequently.
- Remove from heat.
- Beat egg whites lightly in medium bowl.
- Add mushroom mixture, spinach, ricotta cheese and half each of the mozzarella and Parmesan cheese; mix well.
- Add pepper flakes & check for seasoning. (I also season with salt & black pepper)
- Spoon evenly into manicotti shells.
- Place in 9X13 baking dish sprayed with cooking spray.
- Cover with marinara/spaghetti sauce.
- Bake 40 minutes or until heated through.
- Top with the remaining mozzarella and Parmesan cheeses; continue baking 5 minutes or until mozzarella cheese is melted.
