Cheesy Spinach Manicotti Recipe
Manicotti is very yummy and such a versatile recipe. Different cheeses & veggies can be substituted (ie. cottage cheese, Romano, chopped broccoli). Be creative - a recipe the entire family will enjoy!

Ingredients
  • 8 oz. sliced mushrooms
  • 2 to 3 garlic cloves, minced
  • 3 egg whites
  • 1 (10-oz) pkg.. frozen chopped spinach, thawed and well drained
  • 15-oz. part-skim ricotta cheese
  • 1 cup shredded reduced-fat mozzarella cheese, divided
  • 1/3 cup grated Parmesan cheese, divided
  • 2 to 4 pinches crushed red pepper flakes
  • 8-oz. (14 shells) cooked manicotti, well drained
  • 2 cups marinara or spaghetti sauce

Directions
  1. Preheat oven to 350.
  2. Spray large nonstick skillet with cooking spray. (I use a little olive oil instead of spray)
  3. Add mushrooms and garlic; cook 5 minutes on medium heat, stirring frequently.
  4. Remove from heat.
  5. Beat egg whites lightly in medium bowl.
  6. Add mushroom mixture, spinach, ricotta cheese and half each of the mozzarella and Parmesan cheese; mix well.
  7. Add pepper flakes & check for seasoning. (I also season with salt & black pepper)
  8. Spoon evenly into manicotti shells.
  9. Place in 9X13 baking dish sprayed with cooking spray.
  10. Cover with marinara/spaghetti sauce.
  11. Bake 40 minutes or until heated through.
  12. Top with the remaining mozzarella and Parmesan cheeses; continue baking 5 minutes or until mozzarella cheese is melted.

I make this recipe with lasagna noodles and make roll-ups. Great recipe!
