A very quick and easy snack bar to have on hand. Very moist and very yumolicious!

Ingredients
  • 1 cup butter, cubed
  • 1/2 cup water
  • 1 1/2 cups sugar
  • 1/2 cup packed brown sugar
  • 1 cup mased ripe bananas (about 2 med.)
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 cup chopped pecans or walnuts
  • FROSTING:
  • 1 pkg. (8-oz.) cream cheese, softened
  • 1/2 cup butter, softened
  • 1 tsp. vanilla
  • 3 1/2 cups contectioners sugar

Directions
  1. In a small saucepan, bring butter and water to a boil.
  2. Remove from the heat; set aside.
  3. In a large mixing bowl, beat the sugar, bananas, buttermilk, eggs and vanilla until blended.
  4. Combine flour and baking soda; gradually add to sugar mixture.
  5. Carefully beat in butter mixture until blended.
  6. Stir in nuts.
  7. Pour into a greased 15x10x1-in. baking pan.
  8. Bake at 50 degrees for 18-22 minutes or until toothpick inserted near the center comes out clean.
  9. Cool on a wire rack.
  10. For the frosting; in a large bowl, beat the cream cheese and butter until light and fluffy.
  11. Beat in the vanilla.
  12. Gradually add the confectioners sugar until smooth.
  13. Spread olver bars.
  14. Store in the refrigerator.
