this is simple dish to make if your running around and don't have much time. The vegetable in it can be changed if you want.

Heat a large stockpot with a touch of oil or rendered bacon fat (traditionally pancetta is used).
Add onion, celery + carrot, cook until onion is beginning to brown, stirring.
Add 1 diced zucchini, 1 clove crushed garlic, salt and pepper and stir until fragrant, no longer or it will burn.
Add tomato paste and stir to coat vegetables and lightly cook.
Pour in 15 oz. can diced tomatoes, 1 cup (should be chicken, but can use veg or beef) stock, 1 cup water (if you're drinking red wine with the meal add 1/2 cup of that too), a handful of chopped green beans and the diced WAXY potato (don't use a Russet, it will fall apart). Bring to a boil.
Reduce heat and simmer, covered, 20 minutes.
Add 1/2 a 15 oz can (about 1 cup) cooked kidney or cannellini beans, 1/2 cup small-cut pasta, and 1 tbsp Parmesan cheese (optional).
Continue simmering (uncovered this time) until pasta is cooked, about 10 minutes.
Stir in fresh basil to taste immediately before serving.

This is vegetable noodle soup - NOT minestrone. Minestrone ALWAYS has shell beans (like kidney) of some kind added to it as well as green bean pieces or peas, and of course garlic and zucchini. Traditionally it has parmesan cheese in it too, though I omit that for dietary reasons.
