Savory Chicken Scallop Recipe
These savory baked squares are served with a creamy mushroom sauce.

Ingredients
  • 4 cups diced cooked chicken
  • 3 cups fine soft bread crumbs
  • 1 1/2 cups cooked rice
  • 3/4 cup chopped onion
  • 3/4 cup chopped celery
  • 1/3 chopped pimiento
  • 3/4 tsp salt
  • 3/4 tsp poultry seasoning
  • 1 1/2 cups milk
  • 4 slightly beaten eggs
  • 1 1/2 cup chicken broth
  • SAUCE: 1 can condensed cream of mushroom soup
  • 1/4 cup milk
  • 1 cup dairy sour cream

Directions
  1. Combine the first 11 ingredients.
  2. Spoon into a 9 x 13 inch baking dish.
  3. Bake in moderate oven 350 degree oven for 50 to 50 minutes or till knife inserted comes out clean.
  4. Cut in squares. Serve with cream mushroom sauce.
  5. SAUCE: In saucepan combine the 3 sauce ingredients. Heat and stir. Serve spooned over chicken squares.
