Caldo de Puerco

- 2 pounds pork spareribs cut in half crosswise and apart at bone shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 8 cups water shopping list
- 3 cups carrots sliced shopping list
- 1 turnip peeled and cubed shopping list
- 1 large white onion chopped shopping list
- 2 tablespoons chili powder shopping list
- 1 tablespoon salt shopping list
- 1 clove garlic minced shopping list
- 1 teaspoon cumin seed shopping list
- 1/2 teaspoon anise seed shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 4 cups shredded cabbage shopping list
How to make it
- Sprinkle ribs with salt and pepper then arrange in shallow baking pan.
- Bake at 450 for 25 minutes until well browned then pour off fat. And transfer to large saucepan.
- Add water, carrots, turnip, onion, chili powder, salt, garlic, cumin, anise seed and pepper.
- Bring to boil then reduce heat and cover then simmer 2 hours until meat is very tender.
- Skim fat then stir in cabbage and cook 10 minutes longer.
