How to make it

  • Peel the potatoes and wash them
  • Cut the potatoes and the onion (or chives) in small cubes
  • Add salt to the potatoes and fry them (until they're crunchy but not too much)
  • Fry the onion in a frying pan with olive oil
  • Beat the eggs with a pinch of salt and add the other ingredients when ready
  • Heat oil in a frying pan (make sure is antiadherent)
  • Cook the mix in low fire and turn the omelette in order to cook its other side

    I use a deeper one for the potatoes and the same pan for the omelette and the onion so the oil gets the onion essence

    do you use three different pans?


    one for the potatoes, on for the onions and the last one to do the whole thing?...
    seems like a lot...no?...

    or maybe i do not understand...

    i really loved this when i had it in spain...
    i almost passed out because it was so good!!!
    and my dad did some version of it when i was growing up (he lived in Madrid as a student)...

    so i would really like to learn to make it the authentic way..

    In my family this is what we call Tortilla. I haven't made it in a long while, you've inspired me! It is great served cold with a sprinkle of salt.

    I have this all the time, I love it, it's great for parties as well, cut the omellete in bite-size pieces and serve!
