Coconut Bread

- 3 cups all purpose flour shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 2 cups granulated sugar shopping list
- 1 cup vegetable oil shopping list
- 4 eggs lightly beaten shopping list
- 2 teaspoons coconut extract shopping list
- 1 cup buttermilk shopping list
- 1 cup flaked coconut shopping list
- 1 cup chopped walnuts shopping list
How to make it
- Combine flour, baking powder, baking soda and salt then set aside.
- In a large bowl combine sugar, oil, eggs and coconut extract.
- Add dry ingredients alternately with buttermilk then stir just until moistened.
- Fold in coconut and nuts then pour into two greased and floured loaf pans.
- Bake at 350 for 1 hour then cool 10 minute sin pans before removing wire rack.
- Cool completely before serving.
