How to make it

  • Combine flour, baking powder, baking soda and salt then set aside.
  • In a large bowl combine sugar, oil, eggs and coconut extract.
  • Add dry ingredients alternately with buttermilk then stir just until moistened.
  • Fold in coconut and nuts then pour into two greased and floured loaf pans.
  • Bake at 350 for 1 hour then cool 10 minute sin pans before removing wire rack.
  • Cool completely before serving.
