How to make it

  • Preheat oven to 350 then lightly grease a loaf pan and set aside.
  • Beat together the eggs, brown sugar and cooking oil in a mixing bowl.
  • Stir in applesauce and blend again.
  • Sift in flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  • Add rolled oats, prunes and nuts to mix and blend well.
  • Spoon dough into prepared loaf pan and bake for 45 minutes.
  • Let cool in pan on a wire rack for a few minutes then remove from the pan to finish cooling. Store in an airtight container when completely cooled.
