I usually put a pound of bacon in an aluminum tray and put it in my turbo convection oven and bake it for 10 minutes.... pouring off the grease several times as it accumulates. Keep it in the fridge and then cook it a bit more to finish it off. I like it this way as it doesn't burn it and the bacon doesn't shrivel up like in other methods.

Now I know why my mom always kept the bacon grease in a covered pan in our freezer. She would pull it out, heat it, cook the bacon and put it back after it cooled. There never was a mess. Heh! Brilliant.

Yeah, but the bacon grease will degrade the oil so that you can't use it again.
