  • GLAZE:24 OUNCHESOF rOOT BER OR TWO CANS Barqs
  • 4 1/3rd peppr jelly
  • 4 1/2 tap Tabassco Caribbean Style steak sauce or r Picapper sauce
  • 6 cloves
  • 1 stick coiamon
  • 1 bay leaf
  • Peel and juice of 1/2 orange
  • Peel of one l/2 lemon
  • Ham:
  • one 10 to 14 lb cured ,smoked ham Here we use chisecci brand herei New Orleans but any good lean brand is ok
  • 1/4 Cup dark brown sugar
  • 1/2 cp dry mustard

Directions
  1. Prepare Glaze aheadof time using the recipe ingrdiiients
  2. Combobine all the glaze ingredients together in largel SAUCEPAN.bRING TO BOIL.then lower ehat to a simmer and cook for about 10minutes.
  3. Strain the pan contents and discard the s olids. Reduce the liquid to about 1/2 cup Refrigerate if you do not plan o using it right away
  4. Preheat oven to 350 degres
  5. Place the Ham on a rack in a disposable pan as the mess is imposible to clean
  6. Cut shallow gashes in a criss cross pattern across the top of the ham.
  7. Spoon just enough of the glaze over theham to complle3tely wet the surface
  8. Combine the brown sugar and mustard together and pa tit all over theham
  9. Pour !/2 cup water iin bottom of pan
  10. Bake theHam,spooning some of the glaze over it every 15 ,omutes until the glazeis is all used up Try to get some glaze on all parts of the Ham
  11. ADD MORE WATER TOTHE PAN TO KEEP IT FROM DRYING OUT
  12. cONTINUE BAKING UNTIL INTERNAL THERMOMETER READS 160
  13. rEMOVE FROM OVN AND ALLOW TO SIT FOR ATLEAST TEN MINUTES BEFORE SLICING
  14. sERVE WITH YOUR CHOICEO OF SIDE DISHES
