Layered Dungeness Crab Salad With Horseradish Dressing Recipe
LAYERED DUNGENESS CRAB SALAD WITH HORSERADISH DRESSING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dorsey Estate in Justin, Texas in 1988.

Ingredients
  • 1 cup shredded lettuce
  • 1/2 cup cooked Dungeness crab meat picked over for shells and flaked
  • 1/2 red bell pepper seeded and diced
  • 2 celery stalks sliced
  • 6 green onions including tender green tops sliced
  • 3 hard cooked eggs sliced
  • Horseradish Dressing:
  • 3/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon prepared horseradish
  • 1 tablespoon chopped fresh chives
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard

Directions
  1. In a small bowl stir together all dressing ingredients.
  2. Place lettuce in bottom of a glass serving bowl.
  3. Top with half the crab, bell pepper, celery onions, and eggs.
  4. Spread half the dressing over top then repeat layer and top with remaining dressing.
  5. Do not stir then cover and refrigerate up to 4 hours before serving.
