Ingredients
  • 1 Cup Brown rice
  • 1 1/2 cup water
  • 1 can pinto beans, drained
  • 1 ear corn on cob
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1/2 medium onion
  • 1/2 green or red bell pepper
  • 1 clove garlic
  • 1/4 cup salsa
  • 2 Tablespoons ancho chili powder
  • 2 Tablespoons cumin
  • 2 teaspoons salt
  • 2 Tablespoons Olive oil
  • 1/2 cup shredded smoked cheddar(regular can be used)
  • 4 Tablespoons light sour cream or yogurt
  • 3 green onions, sliced

Directions
  1. Put rice and water in pot, bring to boil
  2. Cover and lower to slow simmer, cook about 30-35 minutes or til done.
  3. Chop zucchini, yellow squash, onion, bell pepper and garlic.
  4. Cut corn off cob.
  5. Put oil into saute pan, heat up.
  6. Add onion, bell pepper, squash, zucchini.
  7. Cook until starting to soften then add garlic and corn.
  8. Add chili powder, cumin and salt.
  9. Saute until veggies are tender.
  10. Add drained beans and continue cooking until heated through.
  11. Add salsa to pan and stir.
  12. Put cooked brown rice into bowl top with bean mixture.
  13. Top with cheese, sour cream and green onions.
