Italian Flag Frittata

- 10 oz frozen spinach, thawed and squeezed dry, chopped shopping list
- 1/3 cup roasted red peppers, diced shopping list
- 12 oz silken lite tofu, pureed shopping list
- 4 egg whites, beaten slightly shopping list
- 1/3 cup fat-free, unsweetened soy milk shopping list
- 1/2 tsp oregano shopping list
- 1/2 tsp basil shopping list
- 1 tsp garlic powder shopping list
- 1/2 tsp onion powder shopping list
- 2 tbsp nutritional yeast shopping list
- salt and Pepper to taste shopping list
How to make it
- Preheat oven to 350°F, and grease a 9" springform pan with PAM.
- Scatter chopped spinach and peppers into the bottom of the pan.
- Beat tofu, egg whites, soy milk, herbs, garlic and onion powders, nutritional yeast, salt and pepper.
- Pour over vegetables, smoothing down with a spatula.
- Bake for 50 minutes.
- Cool 10 minutes before turning out and serving.
