Easy Being Green Chicken Enchilada Casserole Recipe
I love meals you can just dump together that become a wonderful mix of flavors!!!! This quick, zesty time saving casserole does the trick. I even pop it in the microwave for 6 minutes instead!

Ingredients
  • 12 small corn tortillas
  • 1 7ounce can salsa verde (medium or hot)
  • 1 12ounce jar chicken gravy
  • 1 8ounce carton sour cream
  • 1 to 2 cups shredded or cubed cooked chicken
  • 1 8ounce shredded cheese (your choice)
  • 1 4ounce olives chopped into rings
  • 2 green onion, greens only, chopped

Directions
  1. Pour can of Salsa Verde into small bowl, add half the sour cream, all the jar of gravy and mix well.
  2. Spray casserole dish with nonstick spray, spread 2 tablespoons of salsa verde mix on bottom.
  3. Layer corn tortillas, chicken, salsa verde mix, and then cheese 3 times. With cheese being the top layer.
  4. Bake at 350 degrees for 20 minutes or until bubbly hot!
  5. Sprinkle green onion and chopped olives on top.
  6. Serve with the extra sour cream.

Alterations


I found a white (Quesco) cheese in the Mexican refrigerator section at the grocery store that is a melting cheese and makes this recipe over the top!!! I also use it to make Quesidillas along with this casserole, yummy.
