I like to have butternuts with a nice thick porter house.

Ingredients
  • 2 med. size butternut squash
  • 1 small carton sour cream
  • 11/2 cup grated sharpe chedder cheese
  • 1/2 cup minced onion ( fresh)
  • 1/4 cup bacon bits ( fresh )
  • 1/4-1/2 cup plain bread crumbs

Directions
  1. Cut squash in 1/2 length wise and remove seeds. place on baking sheet put in 350 preheated oven until meat is soft . remove and let cool. In large mixing bowl scrape meat from squash sides careful not to damage skins. Add all other ingredients reserve 1/2 cup cheese and 2tbls. bacon bits ,also use bread crumbs to thicken if needed (+/-) . mixture should be spoonable like mash potatos. place mixture in each squash skin in equal amounts. Top wih cheese and bacon bits . Return to oven for 20- 25 min. until brown
  2. on top.
  3. OPTION -- leave seeds through first bake and add to mixture..

Can't wait to try. Squash is a staple in this house
Porterhouse good idea as well. Don't eat a lot of red meat but do like it on occasion.
