Tomato And Basil  Foccacia Recipe
Whether you are vegetarian or not this is beautiful to look at as well as delicious. The red tomatoes peeking up through the dough and the fresh green basil add to its visual appeal

Ingredients
  • 1 recipe pizza or foccacia dough
  • olive oil
  • 1/4 cup sliced garlic
  • 1 pint assorted colored cherry tomatoes ( red, yellow, different varities of cherry tomatoes etc. )
  • 1/4 cup grated parmesan cheese
  • 3 Tbs basil leaves
  • 1 tsp coarse salt

Directions
  1. Make your dough, using your favorite recipe
  2. While it is rising, heat 1/4 cup olive oil in skullet. and cook garlic till tender.
  3. Reserve oil and garlic.
  4. Preheat oven to 350F
  5. Brush a sheet pan with olive oil.
  6. Spread dough on pan. to an 8 x 12 rectangle.
  7. Spread on the reserved garlic and oil.
  8. When dough has just begun to rise, place whole tomatoes on surface of dough, pushig lightly to fix them in place.
  9. Allow to dough rise double., surrounding the tomatoes.
  10. Bake until browned about 30 minutes.
  11. Sprinkle with the cheese and bake another 10 minutes.
  12. Remove from oven and sprinkle with the fresh basil and coarse salt.
