How to make it

  • Slice tomatoes in half lengthwise.
  • Brush lightly with a little olive oil and grill over charcoal until tomatoes are slightly charred.
  • Remove from grill then set aside and cool slightly.
  • In blender puree tomatoes with shallot, garlic, vinegar and sugar.
  • Pour mixture into bowl.
  • Add 1 cup olive oil and whisk to blend then season with salt and pepper.
  • Toss with spinach and cheese.
