Charred Tomato Vinaigrette

- 5 roma tomatoes shopping list
- 1 cup extra-virgin olive oil plus oil to coat tomatoes divided shopping list
- 1 shallot minced shopping list
- 2 cloves garlic minced shopping list
- 1/4 cup rice wine vinegar shopping list
- 1 tablespoon sugar shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- fresh spinach leaves to serve 6 people shopping list
- Freshly grated parmesan cheese shopping list
How to make it
- Slice tomatoes in half lengthwise.
- Brush lightly with a little olive oil and grill over charcoal until tomatoes are slightly charred.
- Remove from grill then set aside and cool slightly.
- In blender puree tomatoes with shallot, garlic, vinegar and sugar.
- Pour mixture into bowl.
- Add 1 cup olive oil and whisk to blend then season with salt and pepper.
- Toss with spinach and cheese.
