This easy-to-make ice cream dessert is a perfect dessert for a summer’s evening meal.

Ingredients
  • 2 cups natural granola cereal
  • 1/4 cup firmly packed brown sugar
  • 1/3 cup Butter, melted
  • 1 quart (4 cups) vanilla ice cream with fudge swirl, slightly softened*
  • Chocolate fudge topping, if desired

Directions
  1. Stir together 1 3/4 cups granola, brown sugar and butter in small bowl. Press onto bottom of ungreased 8 inch square pan. Freeze 10 minutes.
  2. Spread softened ice cream over crust; sprinkle with remaining granola. Cover; freeze until firm (at least 2 hours).
  3. To serve, cut dessert into squares. Drizzle with fudge topping, if desired.
  4. *Substitute 1 quart (4 cups) your favorite flavor ice cream, slightly softened.
