Ingredients
  • The beauty,grandeur,preccession and graciousness of the olympic opening ceremony last night,struck a cord within me,the discipline,the dedication,wanted me to learn more about this culture.

  • The chinese principle,besides the tsai/fan,that an everyday menu is planned according to the number of people eating.There is a Cantonese saying"A meal has as many tastes as number of diners"
  • So dinner for four should have four tastes.
  • Even thou I probably will not prepare dishes with,Tree Ears,Jellyfish,Shark Fin,Bean Threads,Agar-Agar,Taro Root,and
  • 100-year old Eggs(actually preserved in alkaline ash) I find the dishes fascinating.

Directions
  1. 2(20oz) Cans Lichees
  2. 1/2 teaspoon Ground Cinnamon
  3. 1/8 teaspoon Ground Cloves
  4. Grates zest of 1 Lemon
  5. Drain lichees,reserving liquid.
  6. In food processor,puree lichees,should be 2 cups of pureed fruit.
  7. Add 2 cups of reserved lichee liquid,cinnamon,cloves and lemon zest,blend well.
  8. Transfer puree to an ice cream machine,and freeze,until set but still soft.
  9. Serve immediately or cover and freeze,to serve frozen sorbet,remove from freezer and refrigerate until softened,about 15 minutes.

Very nice introduction to an even nicer recipe. I have known of Lichees for a number of years but only when I went to an international fresh market in Chicago did I have an opportunity to try one fresh... They are delicious. This recipe sounds awesome. Looks like I will be borrowing my friends ice cream maker....;-)~ Nice Post Jim
