How to make it

  • In a bowl, combine the flour, baking powder, salt and basil.
  • Cut in the butter using a pastry cutter until the flour mixture is crumbly.
  • Add sour cream, knead and roll into a ball.
  • Wrap in plastic wrap and chill for at least 30 minutes.
  • Press the dough into a 9 inch pie pan.
  • Bake at 375 degreees for 10 minutes.
  • Cool completely.
  • Cook the bacon in a skillet over medium heat until crisp.
  • Remove and drain on paper toweling.
  • Using two tablespoons of the bacon drippings, saute the prepped zucchini, onion, and garlic until tender.
  • In a large bowl, combine eggs, cheese seasonings, bacon and zucchini mixture.
  • Pour into baked cooled crust.
  • Bake at 375 degrees for 20 minutes or until a knife inserted in the center comes out clean. Cover the edges of the pastry with foil if it starts to brown too quickly.

    This is another fantastic recipe. I love zucchini and have put a lot in my freezer so I can do this one next week.
