Zucchini Bacon Quiche Recipe

Ingredients

1 1/4 cups of all purpose flour

2 teaspoons of baking powder

1/2 tsp of salt

1/2 tsp of basil

1/2 cup of unsalted butter, room temperature

1/2 cup of sour cream

Filling:

6 strips of bacon, diced

3 cups of thinly sliced zucchini

1 medium onion chopped

1 clove of garlic, chopped

2 eggs beaten

1/4 tsp of dried basil

1/4 tsp of dried oregano

2 cups of shredded mozzarella cheese

2 tablespoons of chopped fresh parsley

1/2 tsp of pepper

generous pinch of salt

Directions

In a bowl, combine the flour, baking powder, salt and basil.

Cut in the butter using a pastry cutter until the flour mixture is crumbly.

Add sour cream, knead and roll into a ball.

Wrap in plastic wrap and chill for at least 30 minutes.

Press the dough into a 9 inch pie pan.

Bake at 375 degreees for 10 minutes.

Cool completely.

Cook the bacon in a skillet over medium heat until crisp.

Remove and drain on paper toweling.

Using two tablespoons of the bacon drippings, saute the prepped zucchini, onion, and garlic until tender.

In a large bowl, combine eggs, cheese seasonings, bacon and zucchini mixture.

Pour into baked cooled crust.

Bake at 375 degrees for 20 minutes or until a knife inserted in the center comes out clean. Cover the edges of the pastry with foil if it starts to brown too quickly.
