I worked at Panera Bread for a minute..The pay was awful but the discount was incredible...One thing I miss the most is the Broccoli and Cheese Soup....Found this on the net and it's a perfect copy cat.

- 1 tbls. butter, melted
- 1/2 onion, finely chopped
- 1/4 cup flour
- 1/4 cup butter, melted
- 2 cups half & half
- 2 cups chicken stock
- 1/2 lb. fresh broccoli
- 1 cup carrots, finely chopped
- 1/4 tsp. nutmeg
- Salt & pepper, to taste
- 2 cups grated sharp cheddar cheese
- 4 Breadbowls

Ingredients

1 tbls. butter, melted shopping list
1/2 onion, finely chopped shopping list
1/4 cup flour shopping list
1/4 cup butter, melted shopping list
2 cups half & half shopping list
2 cups chicken stock shopping list
1/2 lb. fresh broccoli shopping list
1 cup carrots, finely chopped shopping list
1/4 tsp. nutmeg shopping list
salt & pepper, to taste shopping list
2 cups grated sharp cheddar cheese shopping list
4 Breadbowls shopping list

How to make it

Saute onion in 1 tbls. butter
In another pan, cook melted butter and flour , whisking over medium heat for 3-4 minutes
Slowly add half & half while continuing to whisk
Add chicken stock, while continuing to whisk
Once it starts to simmer, let simmer for 20 minutes
Add broccoli, carrots and onions
Cook over low heat until veggies are tender
Add salt and pepper
Pour in batches into blender and mix or use immersion blender
Return to pot and over low heat, add cheese, stirring until well blended
Stir in the nutmeg
Cut tops off of bread bowls
Hollow out
Pour soup into bowls

My husband left me for another woman a few months ago and ever since then my life has been filled with pain and agony because my husband was my first love whom I have spent my entire life with. I used broth in roux then added evaporated milk instead of half and half (happened to have on hand). Don't leave out nutmeg--adds a lot of depth. Family very impressed, which is why we do this, right?
