PERECT SHRIMP FAJITAS WITH PICO DE GALLO This recipe came from an estate sale. I obtained it when I purchased the family collection from the Davies Estate in Malakoff, Texas in 1981.

Ingredients
  • 1/2 cup butter
  • 1-1/2 pounds fresh jumbo shrimp peeled
  • 2 garlic cloves finely chopped
  • 1/4 cup dry white wine
  • 2 cups pico de gallo
  • 1/2 tablespoon seasoning salt
  • Pico de Gallo:
  • 1 green onion chopped
  • 1/4 cup cilantro chopped
  • 1 fresh jalapeno stemmed, chopped
  • 1-1/2 cups diced tomatoes
  • 1 teaspoon seasoning salt
  • 1 tablespoon Italian dressing

Directions
  1. Melt butter then add shrimp and garlic and sauté until pink then add wine and let simmer for 5 minutes.
  2. Add pico de gallo and seasoning salt.
  3. To make pico combine onion, cilantro, jalapeno and tomatoes and mix together thoroughly.
  4. Add salt to taste then add Italian dressing and set aside.
