Peppery Buffalo Shrimp With Blue Cheese

- 1 cup crumbled blue cheese shopping list
- 1/3 cup olive oil shopping list
- 2 teaspoons fresh lemon juice shopping list
- 3/4 cup heavy cream shopping list
- 3 tablespoons minced garlic shopping list
- 1/2 cup chopped fresh parsley shopping list
- 1/3 cup extra virgin olive oil shopping list
- 1/4 cup medium dry sherry shopping list
- 4 tablespoons hot sauce shopping list
- 2 tablespoons fresh lime juice shopping list
- 1-1/2 pounds large shrimp in shells cooked shopping list
- 2 tablespoons kosher salt shopping list
- 2 tablespoons cracked black pepper shopping list
- 1/2 cup olive oil shopping list
How to make it
- Puree blue cheese, oil and lemon juice in a food processor until smooth.
- Transfer to a bowl and whisk in cream.
- Combine garlic, parsley, olive oil, sherry, hot sauce and lime juice together.
- Make deep lengthwise incision along inner curve of each shrimp with a small knife.
- Cut all the way through flesh but not shell.
- Devein shrimp then toss with salt and pepper coating well.
- Heat 2 tablespoons oil in a nonstick skillet over high heat until hot but not smoking.
- Cook shrimp in batches without crowding until just cooked through about 6 minutes.
- Add more oil as needed then transfer to large bowl as cooed.
- Add sauce to shrimp and toss well to coat.
