PEPPERY BUFFALO SHRIMP WITH BLUE CHEESE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cullen Estate in Allen, Texas in 1984.

Ingredients
  • 1 cup crumbled blue cheese
  • 1/3 cup olive oil
  • 2 teaspoons fresh lemon juice
  • 3/4 cup heavy cream
  • 3 tablespoons minced garlic
  • 1/2 cup chopped fresh parsley
  • 1/3 cup extra virgin olive oil
  • 1/4 cup medium dry sherry
  • 4 tablespoons hot sauce
  • 2 tablespoons fresh lime juice
  • 1-1/2 pounds large shrimp in shells cooked
  • 2 tablespoons kosher salt
  • 2 tablespoons cracked black pepper
  • 1/2 cup olive oil

Directions
  1. Puree blue cheese, oil and lemon juice in a food processor until smooth.
  2. Transfer to a bowl and whisk in cream.
  3. Combine garlic, parsley, olive oil, sherry, hot sauce and lime juice together.
  4. Make deep lengthwise incision along inner curve of each shrimp with a small knife.
  5. Cut all the way through flesh but not shell.
  6. Devein shrimp then toss with salt and pepper coating well.
  7. Heat 2 tablespoons oil in a nonstick skillet over high heat until hot but not smoking.
  8. Cook shrimp in batches without crowding until just cooked through about 6 minutes.
  9. Add more oil as needed then transfer to large bowl as cooed.
  10. Add sauce to shrimp and toss well to coat.
