chicken chick pea fettuccine

- 1/2 cup Parmesan, Fresh Shredded cheese shopping list
- 2 med tomatoes, diced shopping list
- 20 g basil, roughly chopped shopping list
- 2 tspn Crushed garlic shopping list
- 400 g can Chick peas, drained shopping list
- 1 tbspn pure olive oil shopping list
- 250 g fettuccine pasta shopping list
- 2 tbspn tomato paste shopping list
- 2 chicken breast fillets Skin off shopping list
How to make it
- Cook fettuccine in a large saucepan of boiling water for 8 minutes or until tender. Drain.
- Meanwhile, heat 1/2 the oil in a large non-stick frying pan over medium-high heat. Cook chicken 4-5 minutes each side until cooked through. Remove and rest, covered, for 5 minutes. Slice thinly.
- Heat remaining oil in frying pan over medium-low heat. Add tomato paste and garlic and cook for 1 minute. Stir in tomatoes and chick peas and cook a further 2 minutes. Return chicken to pan along with fettuccine and gently stir 1-2 minutes until heated through. Stir in basil and serve topped with cheese.
