How to make it

  • Cook fettuccine in a large saucepan of boiling water for 8 minutes or until tender. Drain.
  • Meanwhile, heat 1/2 the oil in a large non-stick frying pan over medium-high heat. Cook chicken 4-5 minutes each side until cooked through. Remove and rest, covered, for 5 minutes. Slice thinly.
  • Heat remaining oil in frying pan over medium-low heat. Add tomato paste and garlic and cook for 1 minute. Stir in tomatoes and chick peas and cook a further 2 minutes. Return chicken to pan along with fettuccine and gently stir 1-2 minutes until heated through. Stir in basil and serve topped with cheese.
