Summertime Peach And Fennel Salad Recipe

Ingredients

1 small bulb fennel, bulb thinly sliced, +3 tbsp of the fronds chopped

3 peaches, peeled and diced

1/2 tbsp fresh thyme, chopped finely

1/2 tsp cinnamon

2 tbsp orange juice

2 tbsp honey

1 tbsp olive oil

salt and pepper

Directions

Whisk together the orange juice, honey, thyme, cinnamon and olive oil.

Gently stir the fennel and peaches with the prepared dressing. Season to taste with salt and pepper. Enjoy!

Great with fish or chicken.
