I adore lemon bars and the addition of macadamia nuts puts these over the top.

Ingredients
  • CRUST:
  • 1c. flour
  • 1/4c. confectioner's sugar
  • 1/2c. butter; melted
  • 1/3c. chopped macadamia nuts
  • FILLING:
  • 1c. sugar
  • 2T. flour
  • 1/2t. baking powder
  • 1/4t. salt
  • 2 eggs
  • 2T. lemon juice
  • 2T. grated lemon zest
  • 1/4c. chopped macadamia nuts

Directions
  1. For crust:
  2. Combine combine flour, confectioner's sugar & butter. Mix in nuts.
  3. Press onto bottom of 8" square pan.
  4. Bake 15-20 min. @ 350F or until lightly browned.
  5. For Filling:
  6. Combine the dry ingredients.
  7. Beat the eggs lemon juice & lemon zest until light & creamy.
  8. Add dry ingredients to egg mixture and mix well.
  9. Pour combbine mixture over hot crust.
  10. Sprinkle with chopped nuts.
  11. Bake 10-15 min. or until lightly browned.
  12. Cool completely.
  13. Cut into bars and sprinkle with confectioner's sugar.
