Seared Salmon With Wilted Citrus Spinach Recipe

Ingredients
  • 1 Grapefruit and zest, divided
  • 2 orange and zest divided
  • 1 Cup slivered almonds, toasted
  • 4-5 Tbs EVOO, divided
  • 4 salmon fillets (about 6 oz each)
  • 1 red onion, thinly sliced
  • 1 Tbs Dijon mustard
  • 3 Tbs white wine vinegar
  • salt and pepper
  • 1 bag of spinach

Directions
  1. Zest grapefruit and oranges, slice the peel and pith off and cut into slices. Reserve.
  2. Toast almonds in small skillet over medium heat.
  3. Preheat large skillet over medium high heat with about 3 Tbs EVOO.
  4. Season fish with salt and pepper and transfer to the hot skillet
  5. Cook 4-5 minutes per side.
  6. Preheat another skillet with EVOO (about 2 Tbs), over medium heat.
  7. Add onion and orange zest, grapefruit zest, mustard and vinegar.
  8. Season with salt and pepper.
  9. Add spinach and toss.
  10. Divide citrus spinach between plates, top with salmon and sprinkle with almonds. Garnish with grapefruit and orange slices
